Apple, Pecan and Kale Salad

Y’all, if there is one thing I love more than oats and dark chocolate…
 
and Zumba, Nicholas Sparks movies, cozy socks, and Daniel Radcliffe (celebrity crush)…
 
it is Kale.
 
 
 
Yep, Kale.  It is a dark, leafy green that is crunchier than spinach and kind of spicy??  Anyways, I fell in love with it when our house mom at the sorority bought a huge bag of baby kale from Costco.  Kale is great on sandwiches and blended into sweet, fruit smoothies, but here is another way I love to enjoy it.
 
Apple, Pecan and Kale Salad
 
 
  • A lot of Kale! 
  • 1 Gala apple, chopped
  • dried cranberries
  • bleu cheese crumbles
  • toasted pecans or walnuts chopped
  • balsamic vinegar or balsamic dressing
I love this salad.  The combination of the sweet apples and the bleu cheese with the kale is pretty great, but what really makes this salad awesome is the toasted pecans.  They have so much flavor and go really well with this salad!  For my dressing, mixed straight balsamic vinegar with a little balsamic dressing.  You don’t need much dressing on this salad since there are so many bold flavors in the ingredients!
 
If you are a little scared of Kale, feel free to substitute or mix in spinach 🙂
