Apple Cinamon Oats

 
Hi there!  What’s the weather like where you are?  Are you in a place where the air is crisp and the leaves are warm shades of red, orange and gold?  Or is there a light frost on your grass and sleety snow blowing around in the air? 
 
If you’re where I am, you have experienced both of these conditions in a matter of two quick days!  That’s Montana for you…you’re rocking a scarf and cozy socks in the morning and shorts by 3 pm.
 
I have found that this yummy breakfast works in any and all conditions.  It is loaded with oats, crisp apples, cinamon and peanut butter. Mmmmmm!!
 
It is so easy to whip up for a quick but delicious breakfast…or dinner…really whenever the mood strikes!  I thought it was the perfect fall breakfast with the apples and a sprinkle of pumpkin granola.
 
 
Cinamon Apple Oatmeal
 
  • 1/2 cup of oats
  • 1/2 cup of cinamon or plain applesauce (I used no sugar added!)
  • a splash of vanilla soy milk
  • 1 tsp of cinamon
  • 1 small chopped apple…about 1/2 cup
  • a sprinkle of your favorite crunchy cereal such as grape nuts, granola, or Kashi Go Lean Crunch
  • 1 tbsp of peanut or almond butter
Pour the oats into a bowl and mix with the applesauce and the soymilk.  Add the cinamon and the chopped apple.  Finish the mix off with a sprinkle of granola (pumpkin flax seed granola really kicks up the Fall factor here!)  and finally add a lovely dollop of creamy peanut butter.
 
What are you waiting for?  Dig in and start your day off right!
 
 
After my oatmeal, I was lucky enough to be able to go for a morning run in the crunchy leaves with the sun shining down on me.  When I ran by this sight I just had to stop and take a picture.  Does it get any more beautiful than that?!

  1. Mmmm tasty sounding start to a fall morning and it is apple month! I'll try it soon. And this from the child who would sit for hours if a bowl of oatmeal was put in front of her in the morning, I love how your tastes have changed over the years.
